Almond Cardamom Fudge

It’s no secret that I have an obsession with Cardamom, even though I haven’t used it in a recipe for a while. I thought it was about time I used it again and have thought for a while it would be great in a fudge! So came about this Almond Cardamom Fudge.

This is quite a decadent dessert – perfect for sharing at a party or as a sweet treat on your Christmas table.

Almond Cardamom Fudge

I used ABC (almond, brazil, cashew) nut butter in this one, but feel free to just use almond butter, or it would even work with peanut butter – but then it would be peanut cardamom fudge, lol!

Depending on how much of a cardamom lover you are, you can put between 1/2 Tbsp to 1 Tbsp in this recipe. I personally used just under 1 Tbsp. An organic cardamom was used in this fudge and I think it’s important to use a good quality one because it can make all the difference!

This would be classed as a raw food dessert if you didn’t add the toasted blanched almonds but it does add a really nice crunch! You could perhaps try substituting raw macadamias instead if you’d like to make it completely raw.

Almond Cardamom Fudge

Our Almond Cardamom Fudge is the perfect decadent sweet treat to take to your next potluck, tea party or Christmas party! 

Ingredients
  • 1 cup abc nut butter
  • 1/2 cup coconut oil melted
  • 1/4 cup maple syrup
  • 1/2 - 1 Tbsp cardamom powder
  • Pinch of himalayan sea salt
  • 1/4 tsp vanilla extract
  • 1/2 cup blanched almonds toasted
Instructions
  1. Mix all ingredients together in a large mixing bowl and then line a loaf or similar size baking dish with baking paper. Pour in the mixture and let set in the freezer for 30 minutes to 1 hour. Best kept in the freezer until eaten. Enjoy!
