Asian Inspired Vegan Garlic Bread

I didn’t have any regular herbs that I would usually put on a garlic bread – but I had coriander. Should I? Could I? Did I? You bet I did! Then I put Kaffir Lime leaf for that extra kick, and miso paste! So it turned into an Asian Inspired Vegan Garlic Bread! It was a bit of a taste sensation – in a good way!

I’ve had an obsession with Kaffir Lime lately! We put it in our Chickpea Butternut Pumpkin Curry the other night and it gave it such a nice kick!

This recipe pairs perfectly with our Chickpea Butternut Pumpkin Curry that I mentioned earlier! (Trust me, we ate both together on the weekend!). It would also go really well with our Winter Warming Potato and Leek Soup or our Simple Spicy Pasta.

Servings: 2 people
Ingredients
  • 1 clove garlic
  • 2 Tbsp nuttelex or plant based butter
  • 1 kaffir lime leaf chopped fine
  • 1/2 to 1 tsp miso paste
  • 1 Tbsp fresh coriander chopped
  • 2 small to medium ciabatta rolls
Instructions
  1. Mix the garlic, nuttelex, kaffir lime, miso paste and fresh coriander in a small bowl.

  2. Cut the ciabatta rolls in half and spread the mixture evenly between them.

  3. Bake under fan grill at 180℃ on the middle shelf for 10 minutes or until golden brown.
