We caught up with my Auntie the other day and she went out of her way to make us these vegan cookies for us. They were delicious! So we thought we’d recreate them and share them with you! So here is the one and only – Aunties Oat Choc Chip Cookies!

These are just good, wholesome cookies. With oats, coconut and choc chips, how could you go wrong!?

We used cranberry in these cookies, but you could substitute with sultanas (if you’re that type!) or I reckon macadamias would work a treat!

We used raw sugar in these, but you could experiment by trying coconut sugar for a healthier option.

Servings: 12 cookies
Ingredients
  • 1 cup oats
  • 1 cup wholemeal flour
  • 1/4 cup raw sugar
  • 1/2 cup flaked coconut
  • 1/4 cup desiccated coconut
  • 130g nuttelex
  • 1/4 cup maple
  • 1/2 tsp bi carb soda
  • 1/4 cup dried cranberries
  • 1/4 cup vegan choc chips
Instructions
  1. Pre heat oven to 160℃. Mix the oats, flour, raw sugar and both types of coconut in a bowl. 

  2. In a small saucepan melt the nuttelex and then add the maple syrup and mix well. Take off the heat and stir in bi carb soda. The mixture will go all frothy. Add this to the dry mixture and mix through well.

  3. Let the mixture cool for 5 to 10 minutes, then add the cranberries and choc chips. (so the choc chips don't melt!)

  4. Bake in the oven for 10 - 15 minutes or until golden brown. Take out of the oven and let cool completely. The cookies will harden up once cool. Dig in!
