It’s time to share one of our absolute favourite recipes! We make this Chai Spiced Banana Bread quite often, maybe once every couple of weeks – whenever we have super ripe bananas – and it never lasts too long (I’m blaming Josh for that!)

So, banana bread is just one of those things that most people love! It’s really perfect for any occasion – bring it in for morning tea at work, take it over to a friends house, make it at home…and eat it. You may also want to check out our Mango Coconut Bread. That is so tasty! And if you’re gluten free, we’ve got something for you too – our Pear and Choc Chip Loaf, which you could sub ingredients and make a banana bread or mango bread. Yay! This only takes 5 to 10 mins to throw together and then you just have to wait for it to cook! Easy!

Take ordinary banana bread to the next level by making this Chai Spiced Banana Bread! You'll be glad you did, though it won't last too long! 

Ingredients
  • 1 1/2 cups plain flour
  • 1/2 cup raw sugar
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1 tsp cinnamon
  • 1/4 tsp clove powder
  • 1 tsp cardamom powder
  • 1 Tbsp fresh ginger
  • 1/4 tsp nutmeg ground or grated
  • pinch of sea salt
  • 2 Tbsp ground flax meal
  • 6 Tbsp warm water
  • 2 small to medium bananas mashed
  • 1/3 cup oil
  • 1 tsp vanilla extract
  • 1/3 cup plant based milk
  • 1/3 cup sultanas optional
Instructions
  1. Pre heat the oven to 180°c.

  2. First make a flax egg by mixing the 2 Tbsp of ground flax meal with the 6 Tbsp of warm water. Set aside for 5 minutes.

  3. Mix the dry ingredients into a bowl - the flour, sugar, baking powder, baking soda, cinnamon, clove powder, cardamom, fresh ginger and nutmeg.

  4. Mash the bananas in a bowl and add the oil, vanilla extract, plant based milk and lastly the flax egg. Mix well and then pour this mixture into the dry ingredients until well incorporated.

  5. Then add sultanas if desired, or you could add vegan choc chips to take it to the next level!

  6. Pour the mixture into a greased loaf tin and bake for 45 to 50 minutes, until a skewer comes out clean. Once cooked, cool it on a baking tray for 20 - 30 minutes and then it's ready to eat!
