I thought I’d share with you all one of the super quick and easy meals that I sometimes make for Josh and I for lunch or dinner. This Chilli and Garlic Penne Pasta is tasty, spicy and really, really easy to throw together! It’s literally 6 ingredients (not including olive oil and salt and pepper!)
If you love garlic and chilli, you’ll seriously love this pasta! We’ve used 1/4 teaspoon of chilli flakes (one of my favourite ingredients!) but you could add more or less as you desire! It does have quite a bite to it with a quarter teaspoon, so if you’re brave (or crazy!) add more! Two cloves of garlic gives it a great garlicky flavour, and together with the fresh coriander, gives a simple but great flavour!
We used penne pasta because we find it works really well with this dish, but you could use other types of pasta – fettuccine or linguine also work really well with this recipe!

- 200g penne pasta
- 1 Tbsp olive oil
- 2 cloves of garlic chopped
- 1/4 tsp chilli flakes
- 2 Tbsp sun dried tomatoes sliced
- 2 Tbsp olives halved
- 1/2 cup fresh coriander chopped
- salt and pepper to taste

Cook the pasta as per the instructions and drain well

In a fry pan, cook the garlic, chilli, sun dried tomatoes, olives and coriander for a few minutes

Add the cooked pasta and salt and pepper to taste

Serve it up!
