Brussel Sprouts!! Ewwww! Like most kids, I used to despise these little green balls. Now that I’ve grown older and my taste buds have changed, now I don’t mind them at all! These Christmas Brussel Sprouts are fabulously tasty and would be a perfect addition to any Christmas feast!

I’m using nutmeg again for this recipe – as it really is the ultimate Christmas spice –  and, it goes so well with all the other ingredients. Also the grated lemon rind gives a real zing to these little beauties. The coconut cream soaks into these Christmas Brussel Sprouts and gives them a deliciously creamy flavour. I’ve used two cloves of garlic in this recipe, because – garlic! It’s just the best, and makes pretty much any savoury dish taste soooo good! Christmas Brussel Sprouts! These tasty morsels are packed with vitamin K and C, and have amazing antioxidant and anti inflammatory properties.
Servings: 4 people
Ingredients
  • 300g brussel sprouts
  • 1 Tbsp olive oil
  • 2 cloves garlic
  • 1/4 tsp nutmeg
  • 1 tsp lemon rind
  • 1/4 cup coconut cream
Instructions
  1. Heat olive oil in a non stick fry pan
  2. Add brussel sprouts and garlic and fry for around 5 to 7 minutes until brussels start browning
  3. Add coconut cream and nutmeg and cook for a further 5 minutes
  4. Add lemon rind a few minutes before you turn the heat off and toss through the brussels thoroughly
