I’ve said it before, and I’ll say it again – there’s nothing like a good burger! And this one has another long-winded recipe name – Gluten Free Black Bean, Sweet Potato, Kale and Dill Burgers!

I’ve just discovered black beans – well, I knew they were around, but I’ve never used them before a couple of months ago. They’re awesome with rice, and great in burgers! I’ve even heard people making brownies with them! (must try that!)

Who else loves sweet potatoes? They’re my new fave! So flavoursome and delicious, and healthy too!

Josh had his Gluten Free Black Bean, Sweet Potato, Kale and Dill Burger on a fresh hamburger roll, loaded up to the max with the kind of stuff you should put on burgers – you know, pickles, beetroot, lettuce, vegan mayonnaise, homemade tomato relish — and I had mine on a salad, because I’m off bread at the moment!

Gluten Free Black Bean, Sweet Potato, Kale and Dill Burgers

This mouthwatering Gluten Free Black Bean, Sweet Potato, Kale and Dill Burger is super tasty and moreish. Perfect on a bun or in a salad! 

Servings: 6 patties
Ingredients
  • 1 cup cooked sweet potato cooled
  • 1 400g tin of black beans drained and rinsed
  • 4 stalks of kale
  • 1 clove of garlic
  • 2 Tbsp fresh dill
  • 1 cup almond flour
Instructions
  1. Fry the garlic, kale and 1 Tbsp of dill for a few minutes, or until soft

  2. Add the cooked sweet potato, blackbeans, the extra Tbsp of dill and the fried garlic, kale and dill to a food processor and then blend until well incorporated

  3. Transfer this mixture into a large bowl and fold through the almond meal. Form into burger patties and coat with a bit of extra almond meal

  4. To cook - fry for around 5 minutes each side, or until nicely cooked and browned

  5. Enjoy on a burger bun, or in a salad
