I had no idea what blondies were a few months ago. Seriously! I’d heard the name floating around, but didn’t know what they actually were. Some time past and I found myself wanting to make some brownies without using chocolate. I found myself thinking, “I wonder what I could call them… Surely not whities!” One spontaneous thought aftwards: Boom! Blondies! Of course. That’s how these Hazelnut Choc Chip Blondies came into being.

I can speak for most when it comes to loving hazelnuts, so I had this idea to use hazelnut meal to give it a nice hazelnutty flavour. I’ve used hazelnut in brownies before, it’s a combination straight from heaven! Hazelnut meal could be hard to come by although it’s easy to make your own. We just blended 1 cup of hazelnuts in our powerful little blender (a food processor would also do the job) and voila, -> hazelnut meal! <- I have also used almond meal in this recipe. For the true nutters out there you can just use all hazlenut meal to satisfy your cravings.

I made some Black Bean Brownies a few weeks ago so I thought I’d try cannellini beans for these blondies. They worked really well and give a nice fudgy consistency.

For a chocolate free version of brownies, try out these Hazelnut Choc Chip Blondies! 

Ingredients
  • 1 cup hazelnuts ground finely
  • 1 cup almond flour
  • 1 400g tin cannelinni beans drained
  • pinch of salt
  • 1/2 tsp vanilla extract
  • 1/2 cup cacao butter melted
  • 2 Tbsp coconut oil
  • 1/4 cup maple syrup
  • 1/4 cup choc chips plus extra to sprinkle on top, if desired
Instructions
  1. Mix all ingredients except the choc chips in a food processor. Transfer the mixture to a bowl and add the choc chips. Scoop mixture into a brownie tin. Sprinkle extra choc chips on top (if desired)

  2. Bake in a fan forced oven at 180℃ for 25 to 30 minutes or until slightly browned on top. Let cool and then slice into squares and enjoy!
