Welcome to our first Christmas in July blog post!! We are so excited for Christmas in July, so we’ve decided that for this month we will have extra Christmas recipes on top of our two per week that we already post. It’s so fun to celebrate in the winter, making warming, festive food, and living the Christmas spirit! We chose these Nutmeg Spiced Cookies as our first treat, as Nutmeg really represents the festive season, and of course, the cookies (and rice milk) to be left out for the reindeers!  😛

Nutmeg always compliments the festive season with the unique scent and flavour it brings to the Christmas table. These Nutmeg Spiced cookies are no exception. You’re whole house will be filled with the aroma of Christmas upon baking these delicious treats.

Nutmeg has had a bit of an interesting reputation. Eating too much of this alluring spice could have you hallucinating. You would have to eat a fair amount though, not the measly amount that you would usually use for baking. Read more about Nutmegs surprising reputation here.

Nutmeg Cookies

I was so proud when we created these cookies. Nearly every time I make cookies they are too soft, or don’t hold their shape. To our joy, the nutmeg spiced cookies held their shape and they weren’t too soft. I have made a few batches and if you leave them in the oven a few minutes longer they will be hard on the inside, but we prefer cookies to be hard on the outside and slightly soft in the middle.

The festive season seems to spread happiness through food and our first tasty treat to everyone for Christmas in July is very contagious! These Nutmeg Spiced Cookies go perfectly with Golden Turmeric Milk. The combination of these two recipes will bring comfort and relaxation, perfect for sharing joyful festive stories with family and friends.

These Nutmeg Spiced Cookies will have you thinking that it really is Christmas time with the beautiful nutmeg smell wafting through the house!
Servings: 14 cookies (approx)
Ingredients
  • 1 cup flour
  • 1/3 cup almond flour
  • 1/2 tsp nutmeg
  • 1/2 tsp cinnamon
  • 1/4 cup Brown sugar
  • Pinch of Salt
  • 1/3 cup coconut oil melted
  • 1 Tbsp Molasses
  • 1 Tbsp rice milk
Instructions
  1. Preheat oven to 180℃
  2. Add the flour, almond flour, nutmeg, cinnamon, salt and brown sugar in a bowl and mix
  3. Add melted coconut oil and mix through
  4. Add rice milk and molasses and mix. Don't be afraid to use your hands, this is the best way to form the mixture into a dough
  5. Once it is all mixed together, form into about 1 inch balls and put them on a baking tray lined with baking paper. Press each one down with a fork
  6. Bake in oven for 12 - 14 minutes (or an extra couple of minutes if you like them really crunchy!)
