Peanut Coconut Cookies

These Peanut Coconut Cookies are a quick and easy cookie recipe perfect to take as snacks to school or work.

Peanut Coconut Cookies

I purchased some crushed roasted peanuts last week that I made peanut brittle out of. It was really good, but I forgot how hard they were on your teeth! – we ended up giving the rest to my brothers, who loved it. Anyway – I thought some peanut cookies would be really delicious. There’s something so satisfying about crunching into a cookie that has peanuts in it, don’t you agree?
