These Raw Coconut Banana Lemon Cookies are healthy! So at least we don’t feel too guilty when you make a batch and they’re gone within a few hours! 😯
I’d been making cookies with sugar lately (check out our Lemon and Poppyseed Cookies!) and thought it was time to make a super healthy version!
We used the almond meal we had leftover when we made our Activated Almond Milk Turmeric Smoothie, and they turned out so great! I love being able to use up stuff that may otherwise be thrown out!
I made these in my dehydrator, and I realise everyone doesn’t have one of those (maybe a christmas present to yourself!? – they are wonderful!), so I also put a few in the freezer and they also turned out great! Because of the coconut oil they hardened up nicely.

Make these healthy and delicious Raw Coconut Banana Lemon Cookies. They can be made in the dehydrator or put in the fridge or freezer to set.
- 1 cup almond flour
- 1 cup desiccated coconut
- Pinch of salt
- 1/4 cup coconut oil melted
- 1/4 cup maple syrup
- generous sprinkle of vanilla bean
- 1 banana mashed
- 1 tsp lemon juice
- 1/2 tsp lemon rind
Mix all ingredients in a container. Dehydrate cookies overnight in your dehydrator, or put them in the freezer for 30 minutes or fridge for a few hours. Enjoy!
