Who has got a spiralizer? It’s a great little tool that helps you create this awesome noodles. You can also spiralize carrots, cucumber and sweet potato. It’s a handy gadget to have in the kitchen, especially during the summer months when you’re craving fresh, healthy meals.
The first way is with a simple salsa. This salad is fresh and light.
The second way is with an Activated Walnut Pesto. We’ve put this recipe up on the blog before, and we think it goes great with these zucchini noodles! This dish is a bit heavier and will fill you up more.
The third way is with a Turmeric Avocado Sauce. This is a creamy version of the noodles, and is super delicious!
The trick with Zucchini Noodles is to let your noodles soak in salt for about 30 minutes. This softens them up and makes them a lot less crunchy, and more like cooked noodles or spaghetti.
The best thing about eating raw zucchini noodles is that you don’t feel ultra heavy after eating them like you would when you eat pasta. You will feel full – but satisfied.

Increase your health with these Raw Zucchini Noodles Three Ways recipes. Learn the trick to make fresh, tasty and amazing noodles out of zucchinis!
- 2 zucchinis spiralised
- 1 tsp salt
- 1/4 cup red capsicum diced
- 1/4 cup yellow capsicum diced
- 1/4 cup corn kernels
- 1/4 cup cherry tomatoes diced
- 1/4 cup pineapple diced
- 1 Tbsp fresh mint chopped
- 1 cup of walnuts soaked for 4 hours
- 1/2 cup sun-dried tomatoes
- 1/4 cup pitted olives
- 1 Tbsp savoury yeast
- 1 clove of garlic
- 2 dates pitted
- 1 Tbsp olive oil
- Salt and Pepper to taste
- 1 medium avocado
- 1/4 tsp turmeric
- Generous sprinkle of pepper
- Pinch of salt
- 1 tsp lemon juice
- 1 tsp savoury yeast flakes

Roughly work on spiralizing about 2 medium zucchinis per person. Spiralize the zucchini and then cover with salt. Let sit for 30 minutes and then rinse thoroughly with water. Now your noodles are ready for toppings.

For the Pineapple Mint Salsa chop all ingredients and add to a bowl. Mix well. Spoon over the zucchini noodles.

For the Activated Walnut Pesto add all ingredients to a blender until well incorporated. Add to the zucchini noodles and mix well.

For the Turmeric Avocado Sauce mix all ingredients in a magic bullet or nutri-bullet. Mix through the noodles.
These all look divine! I enjoy, but get tired of, the ol’ sun dried tomato routine. These are a great way to reawaken my love of zucchini noodles.
