Simple Spicy Pasta

This Simple Spicy Pasta is where it’s at right now. We could eat it every night for dinner I reckon! Isn’t pasta just the best? We love it soooo much! It’s such a quick easy dish and so filling.

Simple Spicy Pasta

If you don’t like spice – you could omit the chilli flakes! (we won’t mind!). We used onion but not garlic in this recipe. We find if we eat too much garlic we get weird dreams (anyone else experience this!?) – so we’ve reduced it in our diets a bit. Feel free to add the garlic when you cook the onion in this recipe!  We love the antipasto flavours through this – the olives, sun dried tomatoes and capers – you could even add some artichokes too. Do you know, I just found out that capers pickled flower buds that are dried , that are then put in a brine or salt. It’s such a cool world we live in, with such an abundance of amazing food!

This really is such a simple dish – I whipped it up the other day in no time! We garnished ours with some fresh parsley out of the garden and some nutritional yeast and black pepper. Feel free to garnish yours with whatever you like!

This Simple Spicy Pasta will leave your taste buds tingling - in a delicious way! It's a lovely flavour combination and sure to satisfy!
Servings: 4 people
Ingredients
  • 1 brown onion diced
  • 1 can chopped tomatoes
  • 2 Tbsp tomato paste
  • 1 bay leaf
  • 1 Tbsp mixed or italian herbs
  • 1/3 cup black olives sliced
  • 1 Tbsp capers
  • 1/3 cup sun dried tomatoes chopped
  • 1/2 tsp chilli flakes
  • 250g fettucine pasta
Instructions
  1. Cook Brown onion for around 5 minutes
  2. Add tomato paste and mix through
  3. Then add the bay leaf and mixed herbs, stir through for a minute or so
  4. You may want to think about putting your pasta on now! (then it will all be ready at the same time!) We love fettuccine with this dish, but any pasta is fine!
  5. Add the tin of chopped tomatoes to the onion mix, together with the capers, olives, sun dried tomatoes and chilli, cook for another 10 minutes or so until the sauce thickens up
  6. Drain the pasta, put it back in the saucepan and mix the sauce through. Serve immediately
Recipe Notes

Garnish with parsley and nutritional yeast if desired! Add salt and pepper to taste.
