Yes, you heard right, Vegan Burger of Awesomeness! I don’t even know how I created this one. It was a whim, with the ingredients I had in my fridge, as is the usual case. It just tasted awesome. Possibly the best burger we’ve ever tasted, and so, so easy to make. I think one of the keys with any burger tasting awesome is to have fresh buns. We all like a fresh bun, don’t we?
I’d forgotten how good beetroot and pineapple is on a burger. SO GOOD! Now I just keep a can of beetroot and pineapple in the cupboard at all times. Hey – but guess what!? If you don’t have those, you could also use fresh pineapple, it works just as well.
There’s something so satisfying and delightful about eating a salad roll (yes, it’s pretty much a glorified salad roll disguised as epic vegan burger of awesomeness) .. it just feels so good eating healthy. Reminds me of eating lunch on summer days on the deck at home with the family. Burgers are always an easy meal to eat anywhere, you don’t even need a plate! We usually go outside in the shaded area under the trees, sit on soft grass and munch away on these burgers. The conversations that arise while indulging on this awesome burger are just incredible. It seems that eating amazing food fosters even more food creativity within us. Whether adding or replacing ingredients or a completely new food idea altogether. Hey sometimes we even get travel ideas based on what we are eating! Give this one a go, it’s super easy to create, doesn’t take much to make and it’s so yummy!

- 1 Fresh Bread Bun
- 1 Vegan Mayonaise
- 1 Avocado
- 1 Tomato
- 1 Tofu we used satay flavour
- 1 Cucumber
- 1 Beetroot
- 1 Pineapple Ring
- 1 Alfalfa Sprouts
- 1 Lettuce
- 1 salt and pepper

Lather fresh bun with vegan mayonnaise

Add avocado slices to the bun

Add sliced tomato (and perhaps a sprinkling of salt and pepper)

Add vegan protein of choice. In this instance I have used the Soyco tofu, satay flavour

Add sliced cucumber, beetroot slices, a ring of pineapple, some alfalfa sprouts and some lettuce

Eat your (vegan) heart out!
