When you were a little kid did you like your sandwiches cut into triangles or squares? I had a preference for triangles, but you can bet that if Mum cut triangles without asking, I wanted squares! 😛 I’m kinda still a triangle type of gal.
I’d been meaning to make this recipe for soooo long (story of my life!), and when I finally did I was like, Woah! This is an amazing substitute for curried eggs. Behold, Vegan Curried Egg Sandwiches!
I used to love curried egg sandwiches back in the day (the pre-vegan day), but now I don’t want to eat eggs anymore, and lucky for me there are sooo many vegan alternatives are coming out now for eggs. It’s awesome. We already know about the scrambled tofu as a replacement for scrambled eggs, but now people are doing fried eggs, whole eggs, poached eggs and scotch eggs. All cruelty free.

Cruelty Free Egg Sandwiches! Learn how to make these Vegan Curried Egg Sandwiches. Super easy and full of flavour too!
- 200g firm tofu
- 50g the inside of a young thai coconut finely chopped
- 1/2 tsp seeded mustard
- 1 Tbsp pickle juice
- 3 Tbsp vegan mayonnaise
- 1 tsp curry powder
- 1/4 tsp kala namak (black salt)
- 1/4 tsp turmeric
- 1 small spring onion sliced finely

Crumble tofu into a bowl, then add remaining ingredients and mix through well.

Toast some bread, add the curried egg mixture on top of one slice, then some fresh slices of tomato and some iceberg lettuce, close the sandwich with the other slice, cut into triangles (or squares!) and eat for breakfast, lunch or dinner!
