Vegan beef bean and noodle soup

Warm up your insides with this Vegan beef bean and noodle soup. Packed with delicious ingredients, it's hearty, it's nourishing, and it's downright tasty.
Servings: 3
Ingredients
  • 1 Tbs olive oil
  • 1 medium brown onion Sliced
  • 3 cloves garlic crushed or chopped finely
  • 1 TBs cumin
  • 1 tsp turmeric powder
  • 1/2 tsp chilli flakes
  • 1 tsp coriander seeds
  • 1 beef stock
  • 4 medium chat potatoes
  • 1 pack singapore noodles
  • 1 can cannellini beans drained (keep the brine*)
  • 1/2 cup loosely packed fresh coriander chopped
Instructions
  1. Cook onion and garlic in olive oil
  2. Add chopped potatoes
  3. Add spices - cumin, turmeric, chilli and coriander seeds, mix through
  4. Add 4 cups of water
  5. In a seperate cup, add the stock cube and 1/4 cup of boiling water, mix until well combined, add to the pan
  6. Cook for 10 minutes
  7. Add cannelini beans and cook for a further 5 minutes
  8. Add singapore noodles till cooked through (usually a few minutes)
  9. Turn soup off the heat and add chopped fresh coriander and stir through
  10. Serve with fresh coriander on top
Recipe Notes

*brine from the cannellini beans (and other beans too) can be used as a replacement for egg whites! I'm just exploring the world of aquafaba (yep, that's what it's called) at the moment. But I'll keep you updated on any recipe creations I come up with!!
