Savoury Turnovers

Filled with pumpkin, potato, peas and spices, these tasty Savoury Turnovers will leave your mouth watering for more. Perfect for a quick snack after work.
Servings: 4 (about 16 turnovers)
Ingredients
  • 2 cups cooked pumpkin chopped into cubes
  • 1 cup cooked potato chopped into cubes
  • 1 cup peas defrosted
  • 1 Tbs curry powder
  • 1 tsp turmeric powder
  • 1 tsp yellow mustard seeds
  • 1 tsp cumin powder
  • 1 tsp coriander powder
  • 1 white onion chopped finely
  • 2 cloves garlic crushed
  • 1 Tbs ginger grated finely
  • 4 sheets vegan puff pastry slightly defrosted
Instructions
  1. Cook onion, garlic and ginger in a dash of olive oil for around 5 minutes
  2. Add the spices and stir through for a minute or two
  3. Add the cooked pumpkin, cooked potato and peas, and cook for a further 5 minutes or until warmed through and all the spices are thoroughly mixed through
  4. Cut 1 sheet of pastry into 4 triangles. Scoop a large spoonful of the mixture into the middle of the triangle and fold up the sides, making sure there are no holes. You can do this by folding up the sides and making a parcel, or folding it over to make it look like a triangle
  5. Place turnovers in the oven and cook for around 15 or 20 minutes at 180 degrees
  6. This recipe will make about 16 turnovers
  7. Enjoy with some sweet chilli sauce or tomato relish
