This Vegan Quesadilla recipe is flavoursome, delightful and moreish. Perfect for a quick snack, or a mexican dinner party!

red onion

purple cabbage
chopped finely

Artichokes
chopped finely

roasted capsicum
chopped

olives
chopped

coriander
finely chopped

vegan cheese
shredded

pita bread

Cook red onion in some oil for about 5 minutes over medium heat stirring frequently

Add Cabbage and cook for a further 3 or 4 mins until cabbage has softened slightly

Take off the heat. Add one half of the pita bread.

Load with red onion, cabbage, and all other ingredients.

Cook for about 5 minutes over medium heat, then turn over and cook for a further 5 minutes.

Cut into 6 triangles.
Parsley also works well if you don't have coriander
If you want to spice it up a bit, add some chilli flakes and/or paprika powder
I used BioCheese but you can use any vegan cheese - even homemade vegan cheese. But you do need the cheese as that's what makes a quesadilla stick together
