Increase your health with these Raw Zucchini Noodles Three Ways recipes. Learn the trick to make fresh, tasty and amazing noodles out of zucchinis! 

Ingredients
  • 2 zucchinis spiralised
  • 1 tsp salt
For the Pineapple Mint Salsa
  • 1/4 cup red capsicum diced
  • 1/4 cup yellow capsicum diced
  • 1/4 cup corn kernels
  • 1/4 cup cherry tomatoes diced
  • 1/4 cup pineapple diced
  • 1 Tbsp fresh mint chopped
For the Activated Walnut Pesto
  • 1 cup of walnuts soaked for 4 hours
  • 1/2 cup sun-dried tomatoes
  • 1/4 cup pitted olives
  • 1 Tbsp savoury yeast
  • 1 clove of garlic
  • 2 dates pitted
  • 1 Tbsp olive oil
  • Salt and Pepper to taste
For the Turmeric Avocado Sauce
  • 1 medium avocado
  • 1/4 tsp turmeric
  • Generous sprinkle of pepper
  • Pinch of salt
  • 1 tsp lemon juice
  • 1 tsp savoury yeast flakes
Instructions
  1. Roughly work on spiralizing about 2 medium zucchinis per person. Spiralize the zucchini and then cover with salt. Let sit for 30 minutes and then rinse thoroughly with water. Now your noodles are ready for toppings. 

  2. For the Pineapple Mint Salsa chop all ingredients and add to a bowl. Mix well. Spoon over the zucchini noodles. 

  3. For the Activated Walnut Pesto add all ingredients to a blender until well incorporated. Add to the zucchini noodles and mix well.

  4. For the Turmeric Avocado Sauce mix all ingredients in a magic bullet or nutri-bullet. Mix through the noodles.
