This Healthy Beetroot Coconut Slice is gluten free and raw, and with only 7 ingredients - why not take this to your next gathering?
In a food processor process the coconut and beetroot until well blended. Then add the remaining ingredients, except the coconut oil. Process well and pour in the coconut slowly. Scoop mixture into a baking tray lined with baking paper and put in the fridge to set overnight. Cut into squares and sprinkle with extra salt and coconut if desired. Enjoy.
