Indulge yourself (and your friends!) with these Lemon and Poppy Seed cookies! Packed full of flavour, these won't last long out of the oven!
Servings: 22 cookies
Ingredients
  • 1 cup flour
  • 1 tsp baking powder
  • 1/2 cup almond flour
  • 2 Tbsp raw sugar
  • pinch of salt
  • 1 Tbsp poppy seeds
  • rind of one small lemon
  • 3 Tbsp nuttelex melted
  • 1 Tbsp maple syrup
  • juice of half a lemon
Instructions
  1. Preheat the oven to 180℃
  2. Mix dry ingredients - the flour, baking powder, almond flour, salt, raw sugar, poppy seeds and lemon rind in a mixing bowl
  3. Melt nuttelex and add lemon and maple syrup. Add this to the dry ingredients and mix thoroughly until it becomes a dough
  4. Roll the dough out onto a floured surface and cut the cookies with a cookie cutter
  5. Bake in the oven for 18 minutes
  6. Let cool for around 15 minutes then try not to eat them all!
