Where are my biscoff lovers at? I only discovered this marvel about 6 months ago and it’s pretty amazing! Super sweet, mind you, but amazing! So I decided to make this Biscoff and Almond Butter iced drink to showcase the biscoff!

As you probably know, biscoff is a spread is a sweet spread that is packed with flavour – think gingerbread flavour, but sweeter. They also have cookies, and now they even have cream filled cookies. You can get the spread in crunchy or smooth and I just pick it up from my local Woolworths.

In this drink I also used one of my fave nut butter brands – Noya Nut butter. They just launched a crunchy almond butter that is so yum! All their nut butters are next level delicious. If you think all nut butters were created equal, you haven’t tried Noya yet!

I used the crunchy almond butter in this and I just love the crunch you get while sipping on the straw. Makes for a really nice textural taste experience.

This a pretty decadent drink – definitely for those that have a sweet tooth!

This sweet and decadent drink will satisfy any sweet tooth!

Servings: 1 person
Ingredients
  • 1/2 – 1 Tbsp biscoff spread
  • 1/2 – 1 Tbsp Almond Butter (I used Noya crunchy Almond butter)
  • Vegan milk of choice (I used Pure Harvest Almond)
  • 1 Tbsp extra biscoff
  • 1 scoop vegan vanilla ice cream
  • 2 biscoff cookies (optional – to serve)
Instructions
  1. Firstly in a heatproof dish sitting on top of a saucepan of boiling water, melt the biscoff spread and almond butter. Once melted, add a splash of milk to the dish (up to a quarter cup) and mix well (I use a whisk for this).

  2. Pour this mixture into another container and wash and dry the heatproof dish and put it back on the saucepan of hot water, this time put the tablespoon of biscoff in it and melt it down.

  3. In a tall tumbler glass cover the rim with the Almond butter if desired. Then drizzle the inside of the glass with melted biscoff. Next, add about 6 cubes of ice. Then fill the glass about 3/4 full with your choice of milk. Then pour the melted biscoff/almond butter mixture on top of the milk. Most of it will sink to the bottom but you can stir it later. Then top with the scoop of ice cream and more melted biscoff. Decorate with the biscoff cookies (I stuck one in the side of the ice cream and crumbled some on top too) and enjoy!
