Dragon Fruit Chia Pudding

Red Dragon fruit, also known as Pitaya is one of my favourite fruits. I had never tried it before I moved up to Queensland. Now you can buy frozen pitaya packs from the supermarket and make the most awesome colour smoothie bowls! I thought I’d mix it up a bit by making these Dragon Fruit Chia Puddings.

These are an awesome colour, and great for a breakfast on the go if you make it in a jar.

You can use coconut sugar instead of brown sugar here – I would’ve used that, but I’d run out. You could also sub maple syrup or brown rice syrup.

I’ve used coconut cream in this recipe, but you could use coconut milk, or any other kind of plant based milk should work as well.

Dragon Fruit Chia Pudding

We topped these with Coconut yogurt, frozen blueberries, and a sprinkle of chia seeds. You can get creative and top it with whatever takes your fancy. If you try this recipe, please let us know on Instagram or Facebook!  And don’t forget to share it with  your chia-loving friends and family.

Dragon Fruit Chia Pudding

Servings: 2 people
Ingredients
  • 1/2 cup chia seeds
  • 1 100g packet frozen dragonfruit
  • 1 Tbsp brown sugar
  • 1/2 cup frozen blueberries
  • 1/2 cup coconut cream
Instructions
  1. Pour 1/2 cup of chia seeds into a large bowl

  2. Blend the remaining ingredients in a blender and pour over the chia seeds. Mix well and transfer to glasses, or glass jars. Leave for an hour or overnight.

  3. Decorate with desired toppings. We used frozen blueberries, coconut yogurt and a sprinkle of chia seeds.
