I just love the colours in this breakfast! So bright and cheerful! I love colourful food! If you don’t have Spirulina on hand you could make it without it. You could also use another berry instead of blueberries. You could try adding nuts or seeds or some chia seeds to the mix too.

I love using a vanilla or natural coconut yogurt to add to these oats. My favourite is the Born Cultured Yogurt based in Noosa, Autralia – but you can now usually find vegan yogurts at your local supermarket!

Easy Blueberry Spirulina Overnight Oats
If you like being prepared you can make this Easy Blueberry Spirulina Overnight Oats the night before - or even up to an hour before! This recipe is quick, easy and tasty!
Servings: 1 person
Ingredients
  • 1/2 cup oats
  • 1 Tbsp shredded coconut
  • 1/8 tsp cinnamon
  • 1/2 tsp spirulina
  • 1/2 cup plant based milk
  • 1 1/2 Tbsp plant based yogurt
  • 1/4 cup frozen blueberries
  • 1 tsp hemp seeds optional
Instructions
  1. In a jar or bowl add the oats, shredded coconut, cinnamon and spirulina. Then add the plant based milk and coconut or natural yogurt. Add the frozen (or fresh) blueberries on top. Refrigerate overnight, or at least for an hour or more. Before serving add the hemp seeds if desired. Enjoy!
