Easy Vegan French Toast

I though it would be a lot harder to make french toast than it actually was! I even thought I would probably use some sort of egg replacer or silken tofu, but this recipe is so easy! That’s probably why I called it Easy Vegan French Toast 😉

It’s so easy you’ve probably got all of the ingredients in your cupboard and fridge right now! Blend all the ingredients in a blender or nutri bullet to make your batter and you’re good to go!

The best bread for this is not your standard loaf – try and get something a little bigger than a baguette, that is nice and soft in the middle and maybe a slight crunch on the outside. Please note when you are making this you may need to add more plant based butter to the saucepan. Be careful not to let it burn, so have it on a medium to low heat, and use a non stick frying pan.

We topped ours with a banana ice cream we made – we blended frozen bananas with some almond butter, cinnamon, cashews and vanilla extract in our food processor to make it. It went perfectly. You could use some vegan vanilla ice cream, or vegan whipped cream. Our 3 ingredient Blackberry Protein Ice Cream would also pair really well!
