Festive Cherry Chocolate Ice Cream

This Festive Cherry Chocolate Ice Cream recipe is such a winner! What’s not to love about cherries and chocolate!? It’s such a good combo – and so Christmassy! This recipe is so delicious and you can pair it with other festive dishes, such as fruit mince pies or Christmas pudding.

It’s pretty easy to make too, I just reduced some frozen cherries with a tiny bit of sugar, make a chocolate ganache, and added those to store bought vanilla ice cream! Then put it all back in the freezer till its frozen again!

Festive Cherry Chocolate Ice cream

This ice cream is full of flavour and so easy to make – no ice cream machine needed!

Ingredients
  • 1 cup frozen cherries
  • 1 Tablespoon caster sugar
  • 1 100g block of original Sweet William dark chocolate (or any other vegan chocolate you have on hand)
  • 150g coconut cream
  • 1 500ml tub vegan vanilla ice cream
Instructions
  1. Place the frozen cherries in a small saucepan with the caster sugar and a splash of water, and cook on medium heat for 10 to 15 minutes, stirring frequently. The cherry juice will get a bit thicker as you cook. Let cool.

  2. In separate saucepan, pour in the coconut cream and gently bring to just boiling point. Break up the chocolate and add this to the hot coconut cream. Let sit for a minute or two, and then whisk until all the chocolate has melted and it is a nice thick ganache. Let cool slightly.

  3. Take the tub of ice cream out of the freezer and let sit for 5 minutes until slightly melted. Scoop out the contents and put in a bowl. Pour the cherry mixture over this and turn through. Then scoop it back in the tub, alternating between a scoop of ice cream and a drizzle of chocolate ganache. (You may have a fair bit of ganache left over once done, which you can use for another recipe). Finally do a drizzle of ganache on top once all the ice cream is back in the tub, and put it back in the freezer till frozen.
