How good is Pesto? Pesto pasta is one of my favourite dishes in the whole entire world. My world entirely changed when I found out how to make pesto. The funny thing is, I thought it would be so hard to make. It’s always the way, when you think things are going to be quite difficult, but then they turn out to be quite easy! Most pesto that you buy in the shops has parmesan cheese in it. This Fiery Pesto doesn’t contain any cheese at all, and is packed full of flavour. I didn’t even use nutritional yeast (mainly because I forgot to put it in when we were making the recipe), but I really love it without.

One great thing about this pesto is that you can change it up as much as you want. If you like it even spicier – add more spice – perhaps some chilli flakes. If you don’t like garlic, but love ginger, then add heaps of ginger. I’ve used cashews in this recipe, but if you prefer you can use pine nuts or macadamias are good too.

My favourite pasta to use in a pesto pasta dish is fettuccine or penne. I don’t know what it is about pesto pasta, but it seems like I can just keep eating it and eating it. If you want a creamier pasta dish, then add some coconut cream into the pasta with the Fiery Pesto, and mushrooms go very well too, if you’re inclined!

Pasta isn’t the only thing that you can use Pesto for. It is such a versatile dish. You can use it as a base on a pizza, on top of soups, in salad dressings, or marinate tofu in it.

Can you believe that Josh had not tried pesto before we met? He loved it the first time he ate it (but, really, he loves most of the food I make 😆 ) I love introducing him to new food.

This Fiery Pesto is packed full of flavour and so easy to make! Enjoy it in pasta, salad dressings, on a pizza base or marinate tofu in it!
Ingredients
  • 3 cups fresh basil washed and firmly packed
  • 1/2 tsp paprika
  • 1/2 tsp cayenne pepper
  • 1/2 tsp coriander seeds
  • 1/2 tsp lemon rind
  • 2 cloves garlic
  • 1 Tbsp ginger grated
  • 1 Tbsp turmeric grated
  • 1/2 cup Cashews
  • 2 Tbsp olive oil
Instructions
  1. Add basil and all ingredients except olive oil to a food processor. Add olive oil through the top while still processing. You may need to stop the food processor a few times to scrape down the sides
  2. Once it has blended thoroughly, store in a jar (make sure the jar is filled properly and there are no air pockets) and pour olive oil on top to preserve
  3. It will store in the fridge for about 2 weeks, or you can freeze it and it'll keep for longer
