Irresistible Freekeh Salad

What is Freekeh? That’s exactly what I thought. I found out it’s a type of wheat that is picked young and green and then roasted and the outside husk is burnt off and what’s inside is what you eat. It’s kind of chewy and hearty. I’m glad we were curious about this food, as it’s absolutely delicious! There’s so many things we could’ve made with it, but we settled on this Fresh Freekeh Salad with Yellow Beans and Cherry Tomatoes.

We’ve moved to Melbourne and we’re staying with my Mum and Dad for a few days. Mum’s got a fantastic veggie garden with loads of fresh veggies, including a variety of fresh tomatoes, yellow beans, zucchini, and an abundance of fresh herbs. Home grown food always tastes so much better! So we decided to put some of the veggies into this delicious salad!

We blanched up the fresh yellow beans (green beans would also be nice!) and cut them into about one inch slices. Then we sliced some of the juiciest, tastiest cherry tomatoes ever in half, added some olives, spring onion, some toasted flaked almonds for that crunchy flavour, and fresh oregano. I’ve been loving oregano in salads lately. If you don’t have any, then fresh parsley would work just as well, or basil, or coriander, or thyme!

Freekeh gives such a lovely, kind of earthy flavour to this salad, almost tastes like a vegetable stock. It was very filling and warming. In order to make this salad you have to cook the freekeh first and cool it, which can take a bit of time, but it’s well worth it.

Servings: 2 people
Ingredients
For the Salad:
  • 1 cup freekeh cooked
  • 200g fresh yellow or green beans blanched
  • 1 spring onion chopped
  • 100g or 1 cup cherry tomatoes halved
  • 1/4 cup of olives sliced
  • 1 Tbsp fresh oregano
  • 1/4 cup flaked almonds toasted
For the Dressing:
  • 4 Tbsp olive oil
  • 2 Tbsp white wine vinegar
  • 1/2 tsp seeded mustard
  • 1 tsp fresh lemon juice
  • salt and pepper to taste
  • 1 tsp maple
Instructions
For the Dressing:
  1. Add all ingredients into a glass jar, put on the lid and shake well. Refrigerate until ready to put on the salad. 

For the Salad:
  1. Cook the 1 cup of freekeh in 3 cups of water. Cook for about 20 minutes, drain, and let cool for about 20 minutes. Blanch the yellow beans and toast the flaked almonds. Add all the ingredients together and mix well. Add the dressing and mix through. Enjoy!
