These Grilled Vegetable Toasties with Sheese were probably one of the best toasties I’ve ever had! And Josh agrees. (it’s his new birthday dinner request, haha).

Filled with gorgeous grilled vegetables, topped with Sheese Australia Mature Cheddar Style Sheese Slices, add in some pesto and hommus, and you have a fabulous sandwich, perfect for a dinner or lunch.

You can find Cheddar Sheese Slices at Coles in the cheese chiller section. It’s sliced, so perfect for toasted sandwiches, soy free, and melts like traditional cheese!

I used pumpkin, zuchinni, roasted capsicum and mushrooms for my grilled veggies in this one, but you could mix it up with whatever you have on hand. I also used a homemade pesto, but you could use storebought. I had a gorgeous organic hommus made locally here on the gold coast, which went perfectly on these toasties, but again, storebought would be fine.

Grilled Vegetable Toasties

Ingredients
  • 4-6 slices of pumpkin
  • 1 small zucchini sliced lengthways
  • 2 portabello mushrooms sliced
  • 1 tablespoon hommus
  • 1 tablespoon pesto
  • 2 – 4 slices of sourdough bread
  • 1 roasted capsicum
  • 1-2 slices of Sheese Mature Cheddar Style Slices
  • Handful of fresh spinach
  • plant based butter
Instructions
  1. Grill the pumpkin, zucchini and mushrooms on a griddle plate or press for around 5 minutes, flipping sides if you are not using a press. The pumpkin may need a little longer.

  2. Lather the hommus and pesto on the bread, and layer up the cooked pumpkin, zucchini, mushrooms, roasted capsicum, Sheese Mature Style Slices and spinach.

  3. Cover the outsides of the bread with plant based butter and then grill in a pan or press for around 5 minutes, until toasted nicely on the outside and the filling is warm.

  4. Enjoy!
