Cookies!! Who doesn’t love cookies? These Hazelnut cookies were made with Greenback Hazelnut Protein Bars. They are so delicious – honestly one of the best protein bars on the market. They also have Salted Caramel, Peanut Butter and Choc Mint Flavours.
These are so easy to make – simply mix the dry ingredients together and the wet ingredients in a separate bowl, and then mix together. Shape into balls and press a piece of the protein bar into each cookie. Then bake for 16 to 18 minutes. Let cool and eat!
If you can’t get hold of the Hazelnut Protein bars feel free to leave them off, or decorate with a hazelnut or blanched almond before baking.

- 1 1/2 cups gluten free flour
- 1/2 cup hazelnut meal
- 1/2 teaspoon baking powder
- Pinch of salt
- 1/4 cup raw sugar
- 1/4 cup brown sugar
- 1/4 cup plant based butter melted
- 1/4 cup plant based milk
- 1/2 teaspoon vanilla extract
- 1 Greenback Hazelnut Protein Bar chopped into small squares

Pre-heat oven to 180°C

Mix the flour, hazelnut meal, baking powder and salt into a mixing bowl. Cream the sugars and butter together in a standing mixer or with beaters. Add the milk and vanilla extract. Mix the wet ingredients into the dry. Form into balls and press one or two pieces of chopped hazelnut protein bars into each cookie.

Bake at 180°C for 16-18 minutes. Let cool and enjoy!
