Young jackfruit itself doesn’t have too much flavour – which is amazing because it’ll take on whatever flavour your put with it.

I used the Jack Man Jackfruit for this dish. It isn’t as white as some of the other jackfruits I’ve used, but still tastes just as good as any other jackfruit – and it is sustainably sourced in Southern India, where they source it locally, not from giant plantations.

To make these, firstly I put all the ingredients in a food processor and pulsed it until the mixture came together. Then I rolled into balls – they looked pretty meat-like at this stage! Then dunked them in the batter and fried.

I made a gluten free batter for these, but you could use plain flour if you prefer it. We served these up with a quick mayo dressing – a few tablespoons of mayo, some dill, paprika and lemon juice. It would work pretty well with a Chipotle Mayo too.

Ingredients
For the jackfruit Balls:
  • 2 cups (320g) young jackfruit
  • 2 tbsp aquafaba
  • 1/4 tsp salt
  • 1/2 tsp onion powder
  • 2 tbsp chickpea flour
  • 1/4 tsp white pepper
  • 1/2 tbsp vegan chicken powder
  • 1/2 tsp garlic powder
For the batter:
  • 1/4 cup rice flour
  • 2 tbsp buckwheat flour
  • 1/2 tsp chinese five spice powder
  • pinch white pepper
  • pinch black salt
  • 1/2 tsp dried oregano
  • 1/4 cup soy milk
Other ingredients:
  • vegetable oil to shallow fry
Instructions
For the jackfruit balls:
  1. Add all the ingredients to a food processor and pulse until it comes together.

  2. Form into small bite sized balls.

For the batter:
  1. Whisk the batter ingredients in a bowl until well combined. Add more milk if necessary.

  2. Heat about an inch of oil or more in a shallow fry pan or saucepan till hot.

  3. Dip each ball in the batter mixture and place in the hot oil. Cook for about a minute each side and then transfer to a paper towel to drain.

  4. Serve with mayonnaise or your favourite dressing.
