We had a dumpling party at our friend Doris’ place a few weekends ago and we created this amazing Lychee, Mint and Elderflower Mocktail! There’s really no better way than spending an afternoon with friends making yummy food and drinks then sharing it!

Josh and I aren’t big drinkers – but this mocktail was so good you don’t even need alcohol! Forget soda and lime, this drink is definitely taking your non-alcoholic beverages to the next level!

It was so refreshing and bursting with flavour that I just didn’t want it to end! The refreshing flavour of the lychee stays around for a while after every sip.

Lychee, Mint and Elderflower Mocktail

After adding Elderflower, the mocktail gains a big step up in flavour and then the lemon and mint to fine tune this tasty drink. To finish the mocktail off, we add in a dash of lemon, lime and bitters drink to add a bit of fizz. Ever since my first sip of this Lychee, Mint and Elderflower Mocktail, I have been craving it quite a lot!

Lychee, Mint and Elderflower Mocktail

Ingredients
  • 1 230g can of lychees and juice
  • small handful of fresh mint
  • juice of half a lemon
  • 1 Tbsp elderflower juice
  • lemon lime and bitters drink
  • lots of ice
Instructions
  1. You can adjust this recipe depending on how many mocktails you'd like to make. If just making for a few people you can use half the can of lychees and juice, or if you're making for more then use the full can, but reserve some lychees for decoration. Add them and the remaining ingredients to a blender except for the lemon lime and bitters drink. 

  2. Use the pulse button on your blender to make it into a nice crushed ice consistency. If you like it a bit runnier that's fine too - adjust the amount of ice to your taste. You can't really go wrong. It's going to taste amazing anyway! 

  3. Pour the mixture into cocktail glasses - about 3/4 full. Then top up with the lemon lime and bitters drink. Decorate with reserved lychees and mint. Enjoy!
