These were some impromptu pancakes I made that I thought would be perfect for Christmas breakfast this year! Take your pancakes to the next level with the festive flavours of our Merry Christmas Pancakes and start off to a wonderful Christmas Day. Why not make them and share them with your loved ones on Christmas morning!

We added orange rind and cloves in the mixture, as nothing screams Christmas more loudly than those two ingredients put together! We also added some desiccated coconut to give it some texture, some dried cranberries that give a wonderful sweetness and colour, and some flaked almonds, which give it a lovely crunch and nice nutty flavour!

I had some leftover ingredients on my bench so in a little bowl I mixed together some of the coconut, cranberries, flaked almonds and orange rind. I used this as a gorgeous decoration for the pancakes! It worked really well and gave them extra flavour too!

These Merry Christmas Pancakes are a perfect treat for your Christmas morning breakfast! Enjoy the flavours of Christmas with these delicious and flavourful pancakes!

Ingredients
  • 1 cup flour
  • 1 Tbsp baking powder
  • 2 Tbsp sugar (coconut sugar works well, or golden castor sugar)
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/8 tsp clove powder
  • 1/4 cup coconut
  • 1 tsp orange zest
  • 1 1/4 cups plant based milk
  • 1/4 cup dried cranberries
  • 1 Tbsp flaked almonds
Instructions
  1. Add the flour, baking powder, sugar, cinnamon, nutmeg, clove powder, coconut and orange zest into a bowl. Then whisk in the plant based milk slowly. Add the dried cranberries and flaked almonds and stir through.

  2. Heat a non stick fry pan on medium heat. Scoop some of the pancake mixture into the pan and wait for bubbles to form on the top, then flip it and let it cook for a further 10 seconds or so and then repeat with the remainder of the mixture. 

  3. Garnish with whatever you desire (vanilla ice cream and maple syrup goes well!). Enjoy!
