I just love how I feel after I eat a big Nourishing Dragon Bowl. My body thanks me. All the goodness of brown rice and a bit of salad, fermented foods and a protein source, like tofu or tempeh, really makes for a great combination – with a delicious dressing drizzled on top of course!

You could easily have this dish without a dressing. But dressings are so good, and I think they take this dish up a notch (or five!)

You could use white rice instead of brown rice in these Nourishing Dragon Bowls, but brown rice makes it just that much healthier, don’t you think? And it has a beautiful nutty flavour that complements all the other ingredients – plus, brown rice is a whole lot healthier than white rice! Read more about how healthy brown rice is here.

The great thing about Dragon Bowls is you can mix it up as much as you want. Use couscous or quinoa for the base and then the veggies or salad you have on hand in the fridge or in the garden. Then add some tofu, seitan or tempeh and you’re set!

Now let’s talk about Fermented Foods! Are you one of those people that no matter how bad something tastes – if it’s good for you, you’ll eat it? Well, sometimes I reckon fermented foods fit into that category. Let’s just say they are an acquired taste! But, really, once you get used to it, it’s not so bad, and if you make your own (video and recipe coming up on that topic very soon!), you can flavour it how you want, put loads of ginger in if you love ginger like me, or garlic, carrot, cabbage, or some cumin or coriander seeds are great too. Fermented foods, like sauerkraut are sooooo good for you. They contain lots of good bacteria to help aid digestion and keep your gut healthy.

A hearty and colourful dish, these Nourishing Dragon Bowls will keep you fulfilled and satisfied - the perfect healthy comfort food!
Servings: 2 bowls
Ingredients
Bowls
  • 1 cup brown rice cooked
  • 1 small Avocado
  • 1 small Beetroot grated
  • 1 small carrot grated
  • 8 slices of tempeh
  • 1/2 Cucumber sliced
  • daikon grated
  • sauerkraut
  • mixed greens a handful
Dressing
  • 1/2 cup Cashews
  • juice of half a lemon
  • 1 small clove of garlic crushed
  • 1 tsp tahini
  • 1/2 tsp seeded mustard
  • 1 tsp capers
  • 1/4 cup of water plus more if needed
Instructions
To assemble the bowls:
  1. Put brown rice in the middle of the bowls, arrange the cooked tempeh, avocado, beetroot, carrot, cucumber, daikon, sauerkraut and greens around the rice.
To make the dressing:
  1. Add all the ingredients into a magic bullet or nutri bullet. Blend until well incorporated. If you like your dressing a little runnier then add more water, a tablespoon at a time.
