Ever had savoury papaya before? Definitely worth a try! It can transform this sweet fruit into something magical. I mean, it’s already magical as a fruit, but these Papaya Steaks are equally as magical, just for something different!

This recipe is pretty easy to throw together, you just need to marinate the Papaya Steaks for a few hours to let the flavours infuse. I usually marinate them for up to 6 hours or overnight.

Don’t get me wrong, these don’t actually taste exactly like steaks, but they have a smokey taste, and savoury overtones, that’s why I called them Papaya Steaks.

Papaya Steaks

I recommend not using a super ripe papaya for this, otherwise it will just end up falling apart. A papaya that is still firm, mostly yellow but with some green still on it is great.

Ingredients
  • 2 Tablespoons tamari
  • 1 teaspoon sesame oil
  • 2 Tablespoons sherry or wine vinegar
  • pinch salt n pepper
  • 1/4 teaspoon paprika
  • 1/8 teaspoon chinese five spice
  • 1/4 teaspoon liquid smoke
  • 1 Tablespoon nutritional yeast
  • 1 Tablespoon rice malt syrup
  • pinch of chipotle powder
  • 1/2 papaya (about 600g)
Instructions
  1. Mix all of the ingredients except papaya in a bowl or a container until mixed well. When it is all mixed, peel and cut the papaya into 'steaks', then marinate them in the mixture and place in the fridge, turning every few hours. Marinate them for up to 6 hours.

  2. When you are ready to cook, heat a non stick saucepan on medium heat. Cook the papaya steaks for a few minutes on each side until browned and warm. Serve with whatever you choose. Potato bake is good, and salad. Enjoy.
