Peanut Coconut Cookies

I purchased some crushed roasted peanuts last week that I made peanut brittle out of. It was really good, but I forgot how hard they were on your teeth! – we ended up giving the rest to my brothers, who loved it. Anyway – I thought some peanut cookies would be really delicious. There’s something so satisfying about crunching into a cookie that has peanuts in it, don’t you agree?

Make these quick and easy Peanut Coconut Cookies to take as a snack to school or work. Tasty and delicious, with a great nutty flavour! 

Ingredients
  • 1 1/2 cup all purpose flour
  • 1/2 cup coconut sugar
  • pinch of salt
  • 1/2 cup desiccated coconut
  • 1/2 cup crushed roasted peanuts
  • 1/2 cup nuttelex
  • 2 Tbsp rice malt syrup
  • pinch of bi carb soda
  • 2 Tbsp plant based milk if needed
Instructions
  1. Pre heat the oven to 180℃

  2. Mix the flour, coconut sugar, salt, coconut and peanuts in a bowl.

    Melt the nuttelex with the rice malt syrup in a small saucepan. Once all melted take off the heat and stir in the bi carb quickly. Then pour this mixture into the dry mixture and mix well to form a dough. If you need more liquid then add the milk 1 tablespoon at a time. 

  3. Form the cookies into round balls and place on a lined baking tray. Then press them down into cookie shapes. 

  4. Bake for 12 - 14 minutes and let cool on a cooling rack. Once cookies are completely cool they are ready to eat!
