Scallion Coriander Potato Patties

Firstly let me say – don’t be scared of the word Coriander in the title! If you’re a coriander hater, no worries, just sub it for another herb. Basil would be pretty nice, or parsley! These Scallion, Coriander and Potato Cakes are so tasty, with minimal ingredients, and easy to throw together.

I used rice flour to give them a nice crispy outer edge.. if you don’t have it, perhaps try ordinary flour or cornflour. Firstly I steam some potatoes and mash them. Then cook the scallions and coriander and add that to the mix. After that, I just dip in rice flour and fry in a hot pan with oil! How easy is that?

We ate these ones for breakfast, but they would also work well for lunch or dinner too. They’re great as a side – imagine them with a big breakfast with tomato, mushrooms, spinach, baked beans.. yum!!

Flavourful morsels of potato goodness!

Servings: 12 patties
Ingredients
  • 1 - 2 tbsp olive oil
  • 2 medium potatoes (500g) peeled and chopped
  • Pinch of himalayan sea salt
  • 2 scallions (spring onions) sliced
  • Small bunch of (1/4 cup) coriander chopped
  • 1/4 cup rice flour
Instructions
  1. Steam the potatoes in a double boiler for around 15 minutes, until soft but not too mushy. Transfer to a bowl and let cool. Then roughly mash with a fork and add the pinch of salt.

  2. Heat some of the oil in a non stick fry pan. Add the scallions and coriander. Cook for a few minutes until fragrant and soft. Mix this into the potato mixture.

  3. Form the mixture into patties and coat them in rice flour. Heat the remaining oil in the fry pan and cook the patties for 4 - 5 minutes each side on medium to high heat, until golden brown on both sides. Enjoy.
