Fantastic as a snack, appetizer, or served as a side, these Smashed potatoes are delicious and easy to make!

I used baby red potatoes for this recipe, but it would work with the baby white ones too.

To top these potatoes I used Hello Friends Foods Spring Thyme Havarti cheese.. If you haven’t checked out Hello Friends Food yet (based in Australia), then you should definitely do so, they do an amazing Haloumi cheese and the BEST baked brie in puff pastry – which is amazingly decadent, and gone in seconds whenever I serve it!

If you don’t have access to Hello Friends cheeses, then you can sub with any vegan cheese, preferably a melty kind that will melt all over the potatoes.

I reckon this recipe would totally work with sweet potato too, jut cut them into rounds and don’t bake them as long as you would the potatoes. Also feel free to substitute the vegetables I have used – I used asparagus, capsicum and spring onion, but you could use corn, zuchinni or anything you desire.

Smashed potatoes with Hello Friends Cheese

Ingredients
  • 500 g new potatoes (I used red for this recipe)
  • 1/4 red or yellow capsicum cut into small squares
  • 3 asparagus stalks finely chopped
  • 1 spring onion finely chopped
  • 90 g Hello Friends Havarti cheese sliced.
  • salt and pepper to taste
Instructions
  1. Pre-heat the oven to 180°C

  2. Wash the potatoes and pierce each one 4 or 5 times with a fork. Bake the potatoes whole for 1 hour. Meanwhile prepare the remaining ingredients.

  3. Once the potatos are baked, use a potato masher to smash them. In order to do this, press down hard on the potato until it looks smashed. Season with salt and pepper as desired, add the additional ingredients and lastly the vegan cheese. Bake for an additional 10 minutes, careful not to let the cheese burn.

  4. Serve warm with a vegan sour cream or dressing of your choice. Enjoy! If you don't eat them all at once, they can be re-heated later in the oven or air fryer.
