Here’s a great recipe to start off your New Year! If you’re sugar free, or trying to cut out sugar, these Sugar Free, Oil Free Blueberry and Lemon Muffins are perfect for you!

I’ve been inspired by my friend Doris over at DeliciousDoris.com to make some more whole food plant based recipes! She has a great carrot cake muffin recipe over there so I thought I’d have a go at making my own wholefood plant based muffins too.

I’ve replaced dates  for sugar in this recipe and it works really well. My secret ingredient in this recipe is sparkling mineral water, which is a bit of a game changer in my opinion! Gives a lovely rise to the muffins.

These muffins only have 9 ingredients and are so easy to make! Once the mix is made up, simply scoop spoonfuls of the mixture into a Muffin tin like this one, and you’re good to go!

If you’re not sugar free then you can sub the dates for 1/2 a cup of sugar – you may need to add more liquid then, just another 1/4 cup or so of the sparkling mineral water.

The beauty of this recipe is that you can mix it up with whatever ingredients you want –  try out Raspberry and Lime, Mango, Kiwi or banana!

Sugar Free Oil Free Blueberry and Lemon Muffins
Servings: 12 muffins
Ingredients
  • 2 cups self raising flour
  • 1 tsp cinnamon
  • pinch of salt
  • 1 cup dates soaked for a few hours
  • 1 tsp vanilla extract
  • 1 Tbsp apple sauce
  • 1 tsp or more of lemon rind
  • 1 cup frozen blueberries
  • 3/4 cup sparkling mineral water
Instructions
  1. Soak the dates for up to an hour (if using softer dates, like medjool, they may not need soaking)

  2. Pre heat the oven to 200ºC

  3. Add the self raising flour, cinnamon, and salt into a large mixing bowl.

  4. Strain the dates, reserving the date water. Blend the dates with 1/2 cup of the date water and add it to the mixing bowl. Then add the vanilla extract, apple sauce and lemon rind. Add in the sparkling water and mix well. Lastly add the blueberries and mix gently through.

  5. Fill a muffin tin with patty pans. Spoon the mixture evenly between the pans.

  6. Bake at 200ºC for 20 to 25 mins or until a skewer comes out clean. Enjoy!
