I recently got sent the new evaporated Oat Milk by Natures Charm, so I thought I’d make a Vegan Coconut Tart with it!
This recipe is easy to throw together and then chuck it in the oven. Eat warm or cold!
I found a similar coconut tart recipe on Best Recipes website, which I took inspiration from for this recipe. I was going to make my own crust, but I had shortcrust pastry in my freezer, so to save a bit of time, I used that instead. But you could totally make your own, and it would probably taste even better!!

- 1 sheet short crust pastry
- 2 Tbsp vegan butter
- 1/2 cup golden caster sugar
- 1/4 cup aquafaba
- 1/2 cup oat milk
- 1 cup coconut condensed milk
- 1 Tbsp custard powder
- 2 Tbsp flour
- 1 teaspoon vanilla paste
- 1 1/2 cups desiccated coconut

Pre heat oven to 180°C.

Place pastry in a round pie tin, preferably in one where the bottom comes out. Pierce the pastry with a fork a few times and pre-bake for 10 -12 minutes.

While that's baking, add the butter and caster sugar into a bowl, with an electric beater, beat them together. Then add the remaining ingredients except for the coconut and mix well. Lastly fold in the coconut. Pour this onto the base and then sprinkle some extra coconut on top.

Bake in the oven for 30 – 35 minutes. Enjoy warm or cold with vegan cream or ice cream!
