This Vegan Curry Mince Recipe is fantastically versatile! And so easy to make. I’ve made it a few times now, so it’s time I share the recipe with you guys!
You could use this recipe in a salad, on a buddha bowl (see below!), wrapped in pastry (recipe to come!), or errm, just eat it by the spoonfull?
I just kept it super basic here, but you could add some other things into this curry mince, such as onion, or other veggies, peas, carrot, capsicum or corn. You could even add a can of chopped tomatoes and some beans and use it as a chilli mix or for nachos!
We heaped some on a bunch of potato gems and then covered with melted vegan cheese. OMG it was so good! HIghly recommend eating it that way!!
Another way we ate it was we put it in hot dog rolls and then topped cooked mushroom on top and vegan cheese!
There’s s many options around these days for vegan mince! – It’s incredible how far we’ve come from the good old nut meat days! A couple of my fave brands are V2, Veef and Made with Plants. I tried the Fry’s one as well last week but TBH it was a bit gross (sorry, no offence to anyone – I loooove the rest of their products!)

- 1 tablespoon olive oil
- 1 teaspoon ginger
- 1 – 2 teaspoons curry powder
- 1 teaspoon cumin powder
- 1 teaspoon coriander powder
- 1/2 teaspoon turmeric powder
- 1/4 teaspoon cinnamon powder
- 1 packet vegan mince (500g)

Heat the olive oil in a fry pan over medium heat. Cook the ginger for a minute or so and then add in the rest of the ingredients. Cook until the vegan mince is cooked. That's it! You now have Vegan Curry Mince to use however you like!
