This Vegan Green Papaya Salad is so fresh and yummy! It packs a punch with the chilli, but also has a lot of other flavours and freshness going on!
If you have green papayas, making this salad is a great way to use it! A word of caution – perhaps wear some disposable gloves when cutting and handling the papaya. It has a kind of resin that seems to stick to your hands and is hard to wash off!
Fresh chilli gives this salad a nice kick, but if you don’t have it on hand, use chilli flakes. I used a vegan fish sauce in the dressing, but if you don’t have it, then add a bit of tamari and fresh lime juice in it’s place.
This recipe is awesome as a side salad, or a meal on it’s own if you feel like something light. We sometimes eat it with Teriyaki Tofu, which is a great combination! You could also try it with our Jalapeno Poppers, or sub it for the salad in our BBQ Chickpea Salad Bowls!

- 2 medium carrots peeled and grated
- 1 small cucumber grated
- 1/4 green papaya peeled and grated
- 1/4 red capsicum finely sliced
- 1 tomato diced
- 1/2 teaspoon ginger grated
- 1/2 small chilli chopped finely
- 1 cup beanshoots
- Small handful of coriander chopped
- 1/4 cup crushed peanuts
- 1 tbsp fresh lime juice
- 1 teaspoon fish sauce
- 1 teaspoon sesame oil
- 1 teaspoon tamari
- 1 teaspoon caster sugar

Add all the ingredients for the salad into a large salad bowl. Mix well.

Mix the dressing in a separate container or jar. Stir until well combined. Pour the dressing over the salad and mix through well. Enjoy.
