I made these White Chocolate Coconut Logs a few years ago for a raw food function I was catering for – and they tasted so good I thought it was about time I made them again and shared the recipe!
This is a really easy recipe to throw together and you can keep them in the fridge or the freezer. All natural and healthy ingredients – you can’t go wrong!
These are perfect on a Vegan Food Platter – perhaps with our Pepita, Spirulina and Date Balls, our Baked Cashew Cheese and some dip – try out our Caramelised Onion Chipotle Hummus. YUM!
You could make these into any shape you want – I thought that the logs look great (and I was a bit over balls, lol), but you could make them into balls, or little cookie shapes too. Get creative!

- 1 cup almond meal
- 1 cup shredded coconut
- 1/2 cup cashews ground
- 50g cacao butter melted
- 1 tsp vanilla extract
- 1/4 cup agave nectar
- pinch salt himalayan sea salt

Add the almond meal, shredded coconut, cashews and salt into a food processor and process until well combined. Melt the cacao butter and add the vanilla extract into it. Then add this and the agave to the food processor and process till smooth. Form into log shapes and coat with more coconut (I used a combination of shredded and desiccated). Refrigerate for about an hour to harden up. Store in the fridge or freezer and take out just before serving.
