White Chocolate Macadamia Slice

Macadamias have to be one of the tastiest and most delicious nuts out there! How good are they roasted and salted? I’ve had macadamia slice before but I thought I’d have a go at making my own!! So here’s my White Chocolate Macadamia Slice.

I got gifted these macadamias by Aus Macadamias, they are so fresh and delicious. They also gifted me some macadamia oil and macadamia butter. YUM!

For the base I used a packet of biscuits, (cookies for anyone in the Northern hemisphere!) a pinch of salt and some vegan butter. I used digestives for this recipe, but you could use arrowroot biscuits, or even chocolate ripple biscuits would work! I baked this for about 10 minutes and then let it cool down.

For the filling I pre-toasted 1 cup of macadmias and let them cool. Then I tossed them in a bit of himalayan sea salt (totally optional, but yum!), and then I melted some vegan white chocolate – in Australia I’ve been loving the K. M Foods range of chocolate, it’s delicious. And I added some Oat Condensed Milk from Natures Charm – you could use the Coconut condensed milk too. I also added some brown sugar and butter. I put 3/4 of macadamias into the cooked base, then I melted that all down and poured it on top of the macadamias. Then I put the remaining macadamias on top, and put it in the fridge to set.

This one didn’t quite set as much as I wanted, so next time I think I will add more white chocolate and less condensed milk. It was still delicious though, and pretty sweet! So if you have a sweet tooth – and if you love macadamias, you’ll love it!

This is an absolutely delectable White Chocolate Macadamia Tart! So yum!

Servings: 8 people
Ingredients
Base:
  • 300g vegan biscuits (such as digestives)
  • 1/2 cup vegan butter
  • Pinch of salt
Filling:
  • 1 cup macadamias
  • 1/4 tsp himalayan sea salt (optional)
  • 2/3 cup vegan white chocolate
  • 2/3 cup condensed oat milk
  • 2 Tbsp brown sugar
  • 2 Tbsp vegan butter
Instructions
For the base:
  1. Pre-heat oven to 180°C

  2. Put the biscuits in a food processor and process till crumbly. Add the vegan butter and salt and process till combined. Make sure it sticks together. Press into a 13cm x 36cm rectangular tart tin. If you don't have one, it should work in a round tart tin. Pierce base with a fork.

  3. Bake in the oven for 10 minutes and then let cool.

For the filling:
  1. Bake the macadamias in the oven for about 7 minutes. Remove from oven and let cool. Toss with the himalayan sea salt if desired. Once cool, add about 3/4 of the macadamias to the base.

  2. Add all the remaining ingredients to a saucepan and stir until it has all melted together. Pour this mixture on top of the macadamias. You may have some leftover mixture. Add the remaining macadamias on top.

  3. Refridgerate overnight. Enjoy the next day!
