Wow yourself by making this Fragrant Israeli Rice! It's got the crunch of toasted pepitas, sweetness of sultanas, plus it's a complete protein in a meal!

Servings: 4 people
Ingredients
  • 1 Tbsp peanut oil
  • 1 onion diced
  • 1 clove of garlic minced
  • 1 tin brown lentils
  • 1 tsp cumin powder
  • 1 Tbsp curry powder
  • 1/2 tsp turmeric powder
  • 2 cups cooked basmati rice
  • 1/4 cup sultanas
  • 1 Tbsp fresh parsley
  • 2 Tbsp dried shallots
  • 2 Tbsp pepitas toasted
Instructions
  1. Heat peanut oil in a fry pan. Add onion and garlic and cook for 5 minutes until softened. 

  2. Add strained lentils and stir through. Add spices and mix through. Add cooked basmati rice and mix through. Add sultanas and parsley and mix through. 

  3. Add dried shallots and toasted pepitas at the end. We served ours with pappadums.
