Raw Cauliflower Turmeric Sushi

Give yourself a health boost by making this colourful Raw Cauliflower Turmeric Sushi! So easy to make with NO soaking nuts or dehydrating. 

Servings: 2 people
Ingredients
For the Sushi:
  • 2 cups raw cauliflower
  • 1/2 cup flesh from young thai coconut
  • 1 tsp ginger grated
  • 1 tsp turmeric
  • 3 sheets of nori
  • 1/2 avocado cut into strips
  • 1/4 red capsicum cut into strips
  • 1/4 yellow capsicum cut into strips
  • 1/2 medium cucumber cut into strips
  • 1 cup salad greens washed
For the Dressing:
  • 1 Tbsp tamari
  • 1 Tbsp mirin
  • Generous splash of sesame oil
  • 1/2 small red chilli chopped finely
Instructions
  1. Blend the cauliflower, flesh of the young thai coconut, ginger and turmeric in a food processor until well mixed, like a pulp. Place one nori sheet with the shiny side down on a sushi roller matt. Add a third of the mixture to the nori sheet (there is enough for 3 nori rolls) and cover most of it, leaving about one inch at one end so you can roll it up properly without stuff falling out. 

  2. Then place the avocado, red capsicum, cucumber and salad greens in the middle. Then roll it up! Can take a bit of practise to get a nicely rolled sushi! Then slice it up and eat it!

  3. To make the dipping sauce add everything into a small ramekin and serve with the sushi.
