Macadamias have to be one of my favourite nuts of all time! In my opinion they are best roasted, so these Lemon Pepper Roasted Macadamias are now one of my fave snacks!!
These are so easy to make – literally takes a couple of minutes to throw together. The hardest part is waiting for them to cool down!
I used Cobram Estate Lemon Infused Olive oil to give these an extra lemony taste – it worked really well. If you don’t have that, just use normal olive oil.
I got gifted these Macadamias from Aus Macadamias – they’re so fresh and absolutely delicious!!
There’s so many ways you could make this, you could use different spices and different herbs and mix it up however you want. These would be a perfect Christmas snack. Someone said the other day that Christmas is only 100 days away…how did that happen!!
If you love macadamias, try out our White Chocolate Macadamia Tart in our last post. Or, if you have my cookbook – Vegan Holiday Recipes, there is a Macadamia Crusted Whole Roast Cauliflower in there. It’s so yum!
If you love the look of these, you’ll probably also like our Chai Spiced Nuts recipe.
Please share this with your macadamia loving friends and family!! And if you make it, let me know on Facebook or Instagram.

Place macadmias into a baking tray, add other ingredients and mix well. Bake in an air fryer at 180°C (350°F) for 5 minutes. Or, bake them in a pre-heated oven on the same temp for about 10 minutes, being careful not to burn. Let them cool and then they're ready to enjoy!
