I whipped up this Tasty Cashew Parmesan in minutes the other night when Josh had cooked a pasta dish for our dinner and I didn’t have any cheese to put on top! It was so quick and easy to throw together, I’ve made it a few more times since then, as I can’t bear to run out!

This recipe would work perfectly on our Tasty Eggplant Tomato Pasta, our Chili and Garlic Penne Pasta, our Simple Spicy Pasta… and if you’re all pasta-ed out, try it on our BBQ Chickpea Salad Bowls, our Potato and Leek Soup or Vegan Caesar Salad with Smoky Tempeh!
Seriously, I’ve been putting this on everything… avo on toast, pumpkin soup, crackers with tomato… you name it! (I’ve even been known to eat it by the spoonful, haha)

- 1/2 cup cashews
- 1/4 cup nutritonal yeast
- 1/2 tsp black salt
- Sprinkle of black pepper
- 1 tsp vegan chicken stock powder
- 1/2 tsp english mustard

Blend the cashews in a food processor until fine, add the remaining ingredients and blend until incorporated. Keep in the fridge until you want to use. Great on pasta, salads and toast!
This cheesy sprinkle is worth its weight in gold. Seriously, I have yet to find a meal that it doesn’t enhance at least a little bit. Thanks for sharing!
