Vegan Curried Egg Sandwiches

Cruelty Free Egg Sandwiches! Learn how to make these Vegan Curried Egg Sandwiches. Super easy and full of flavour too! 

Servings: 2 people
Ingredients
  • 200g firm tofu
  • 50g the inside of a young thai coconut finely chopped
  • 1/2 tsp seeded mustard
  • 1 Tbsp pickle juice
  • 3 Tbsp vegan mayonnaise
  • 1 tsp curry powder
  • 1/4 tsp kala namak (black salt)
  • 1/4 tsp turmeric
  • 1 small spring onion sliced finely
Instructions
  1. Crumble tofu into a bowl, then add remaining ingredients and mix through well. 

  2. Toast some bread, add the curried egg mixture on top of one slice, then some fresh slices of tomato and some iceberg lettuce, close the sandwich with the other slice, cut into triangles (or squares!) and eat for breakfast, lunch or dinner!
