Make your Halloween awesome by making these Black Bat Cookies! Take them to a Halloween Party - or eat them all to yourself! 

Servings: 20 cookies
Ingredients
For the Cookies:
  • 1 cup flour
  • 1/2 cup almond flour
  • 1 tsp baking powder
  • 1/4 cup coconut sugar
  • 1 tsp activated charcoal
  • 1/4 cup vegan butter
  • 1 tsp vanilla extract
  • 1 Tbsp maple syrup
  • 3 Tbsp plant based milk
For the icing:
  • 1 cup icing sugar
  • 1/4 cup nuttelex or plant based butter
  • 2 Tbsp plant based milk
  • 1/4 tsp green food colouring (or food colouring of your choice)
Instructions
For the Cookies:
  1. Preheat oven to 180℃

  2. Add the flour, almond meal, baking powder, coconut sugar and activated charcoal into a bowl and mix well. In a separate bowl melt the plant based butter and then add the vanilla extract, maple syrup and milk. Add the wet ingredients to the dry ingredients and mix well. 

  3. Roll mixture out to about 1/4 inch thick onto a floured surface and use your cookie cutters to cut shapes into them. Place on a baking tray lined with paper and bake in the oven for 12 - 15 minutes. 

  4. Let cookies cool on a cooling rack.

For the icing:
  1. Once the cookies are completely cool, make the icing by mixing all the ingredients together in a bowl. Using a piping bag and a small round tip nozzle, decorate the cookies as you desire! Let the icing set and serve these cookies at your Halloween party!
